Why is it practically impossible to find out exactly how much BTC I will receive for my euros before I hit the final confirmation button? Most platforms seem to hide a 3% spread until it's too late. Are there any honest alternatives?

Does the amount they show at the start include the network fee for the Bitcoin blockchain, or is that added on at the very end?
